Copycat Chipotle Corn Salsa Recipe

An easy & delicious side dish! Enjoy the same delicious flavors of Chipotle's famous corn salsa right in the comfort of your own home!

Ingredients
 

  • 1 15 oz can white corn
  • 2 poblano peppers
  • 1/2 cup cilantro chopped
  • 1/2 cup red onions diced (about 1/3 of a medium onion)
  • 1 medium lime or 1 1/2 TBSP lime juice
  • 2 TBSP high heat oil such as canola, grapeseed, olive or avocado oil
  • salt to taste
  • pepper to taste

Equipment

  • 1 medium bowl
  • aluminum foil optional
  • 1 small baking tray

Method
 

  1. Line a medium baking tray with aluminum foil. Place poblano peppers in pan, drizzling oil over them to coat. Place on top shelf in oven and set to broil. Broil for 2-3 minutes or until each side is blistered.
  2. Once poblano peppers are done, remove seeds and scrape blistered skin off (this should come off very easily).
  3. Dice poblano peppers & red onion and chop cilantro.
  4. Drain can of white corn and add to medium bowl along with poblano peppers, red onions & cilantro.
  5. Juice lime into mixing bowl and mix until ingredients all combined well.
  6. Add salt and pepper to taste.
  7. Enjoy with chips, tacos or in a burrito bowl with leftover beef birria!
