Jamaican Green Seasoning Recipe

This Jamaican green seasoning is a quick marinade made with staple herbs and vegetables and it is an absolute must for true Jamaican flavor!

Ingredients
 

  • 250 grams (medium) yellow onion
  • 230 grams (large) green bell pepper de-seeded
  • 90 grams (large stalks) scallions
  • 90 grams (cloves) garlic peeled
  • 30 grams (stems) parsley both curly and flat-leaf work
  • 30 grams (sprigs) fresh thyme
  • 1 medium scotch bonnet pepper or habanero pepper
  • 1 large lime juice juice only

Equipment

  • 1 blender/food processor
  • 1 24 oz air-tight container

Method
 

  1. Rinse then add all the ingredients to a high-powered blender and process until smooth.
    You may have to stop during the process to push the contents down towards the blade.
  2. Transfer to an air-tight container and store in refrigerator for up to 10 days or freeze portions for as desired later use.

Notes

  • Use fresh produce and herbs. The natural water content makes blending easier and fresh produce has enzymes that help to tenderize meat when the green seasoning is used as a marinade.
  • Make a double batch. I love making tons of the marinade since I use it so often. It freezes really well, and you can pre-portion them in ziploc bags, ice cube trays, or silicone freezer molds.
