Creamy stovetop oatmeal simmered in any milk of your choosing, topped with chocolate chunks and finished with an easy meringue torched to perfection. Ready in less than 10 minutes!
Add the egg whites and sugar to a small bowl and whip on high speed with a hand mixer or electric whisk until it is glossy and forms firm peaks. Set aside.
Add the oats to a saucepan along with the milk, cinnamon, bay leaf, and salt. Cover and allow to simmer over low-medium heat for 3-4 minutes until the oats appear plump and are tender.
100 grams rolled oats, 1 large bay leaf, ½ teaspoon ground cinnamon, salt, 475 milliliters almond milk
Stir in the sweetened condensed milk and remove the oatmeal from the heat.
60 milliliters sweetened condensed milk
Portion into bowls, then divide the chopped semi-sweet chocolate between the 2 servings, sprinkling it on top while the oatmeal is still hot.
30 grams semi-sweet chocolate
Top with the prepared meringue (or marshmallow fluff), then using a kitchen torch, brown the meringue to your desired doneness.
Avoid holding the torch in one spot. Keep it moving in a sweeping motion across the meringue for even browning.
If making the meringue, make sure your whisks are clean and grease-free. Any fat will prevent the egg whites from whipping up into a meringue.
Semi-sweet chocolate is best for this recipe since it melts readily with the heat from the oatmeal and contrasts the sweetness. If you opt for milk chocolate, I recommend shaving it so that it's easier to melt.
Don't have a kitchen torch? Portion the oatmeal into oven-safe bowls and broil for 1-2 minutes on the top rack in your oven
Make overnight s'mores oatmeal by adding the oats, milk, sugar, and spices to a sealed container and refrigerating overnight. You can also make the meringue in advance as well; although it may weep some water, the whipped portion remains stable. Once you're ready to eat, heat the oatmeal in the microwave, top with and torch your meringue "marshmallow" topping, and enjoy!
