Oats. Old-fashioned rolled oats are used for this recipe. They have a meaty texture but don't need a lot of time to cook (it's why I use them in my easy oatmeal raisin cookies), but you can use any oats you like. Groats will need more cooking time, while steel-cut and instant need less.

Milk. I used unsweetened vanilla almond milk, but you can use any milk or dairy substitute you prefer.

Chocolate. Opt for semi-sweet chocolate. It has a slight bitterness to contrast the richness of the oatmeal. Semi-sweet chocolate also melts readily when exposed to heat, so it gives you that gooey melt like in my thick chocolate chip cookies without any extra effort.

Egg whites. Used for the "marshmallow" meringue topping. Both shell and carton egg whites work for this recipe, but shell egg whites whip to a higher volume. Save even more time by skipping the meringue altogether and using marshmallow fluff!

Sweetener. Granulated sugar is needed for the meringue and is important for the meringue's stability. For the oatmeal, I use sweetened condensed milk for extra creaminess, but you can use your preferred sweetener.

FAQs

What's the difference between old-fashioned, steel-cut, and instant oats?

Old-fashioned (also called rolled oats) oats have been flattened to facilitate quicker cooking. This is also the case with instant oats, which are rolled even thinner than old-fashioned oats.
Steel-cut oats are whole, unprocessed oat grains (groats) that have been cut into smaller pieces. The larger surface area helps the oats cook faster.
While I opted for rolled oats, all options can be used to make the s'mores oatmeal. Groats will need the most time to cook

Can I use carton egg whites to make the meringue for s'mores oatmeal?

Yes! The label may not recommend it, but you can totally use carton egg whites for the s'mores meringue. Compared to shell egg whites, carton egg whites have less volume at maximum whip, but they still make a stable meringue. I've used several brands, including the generic store brand, and was equally successful each time.

What if I don't have a kitchen torch to toast the meringue?

If you don't have a kitchen torch, portion the oatmeal into oven-safe bowls and broil them for 1-2 minutes on the top rack in your oven. Be sure to keep an eye on it because they'll brown faster than you think.

Can I use milk chocolate instead of semisweet chocolate for s'mores oatmeal?

Semisweet chocolate melts readily with the heat from the oatmeal without additional intervention. The slightly bitter taste also helps to contrast the richness of the oatmeal.

Can I make the oatmeal with water instead of milk?

Milk gives the oatmeal a creamy flavor. If you don't want to use dairy, any non-dairy alternative will work (I like to use almond milk). If you really prefer to use water, I recommend not skipping the condensed milk to get that creamy element.

  • Use milk or your favorite non-dairy alternative. Milk gives the oatmeal a rich, creamy flavor. If you opt for water, I highly recommend using condensed milk to get that creamy element.
  • Make sure your whisks are clean and grease-free. Any grease or fat will prevent the egg whites from whipping up into a meringue.
  • Keep your heat on low to medium. It gives the oatmeal time to absorb the liquid and become creamy, especially for rolled oats and groats. If the heat is too high, the oatmeal won't have as soft a texture, and it will dry out quickly and burn easily.

Make the Meringue Topping (If Using)
  1. Add the egg whites and sugar to a small bowl and whip on high speed with a hand mixer or electric whisk until it is glossy and forms firm peaks. Set aside.
    78 milliliters egg whites, 50 grams granulated sugar
Make the Oatmeal
  1. Add the oats to a saucepan along with the milk, cinnamon, bay leaf, and salt. Cover and allow to simmer over low-medium heat for 3-4 minutes until the oats appear plump and are tender.

  2. Stir in the sweetened condensed milk and remove the oatmeal from the heat.

  3. Portion into bowls, then divide the chopped semi-sweet chocolate between the 2 servings, sprinkling it on top while the oatmeal is still hot.

  4. Top with the prepared meringue (or marshmallow fluff), then using a kitchen torch, brown the meringue to your desired doneness.
  5. Avoid holding the torch in one spot. Keep it moving in a sweeping motion across the meringue for even browning.
