Whole milk ricotta. The fat helps to stabilize the ricotta once dipped, so a watery layer doesn't separate out.

Truffle zest. This is my favorite substitute for pricey truffles, and it has a distinct flavor without being artificial. I use the one from Sabatino Truffles. You can also try replacing the salt called for with a high-quality truffle salt.

Honey. Adds sweetness to cut through the truffle flavor, which can be very savory.

Bread & butter for crostinis. I like to use sourdough, but crusty breads like baguettes, ciabatta, or even this same-day focaccia are also great options!

How to Make Whipped Ricotta with Honey & Truffle

  1. Step 1: Make the crostinis. Brush the bread with butter and toast in the oven at 475°F for 4 minutes on each side.

FAQs

Can I use a different cheese for whipped ricotta?

Sure! Brie and cottage cheese can be used in place of ricotta for most whipped ricotta recipes, but note that brie will have a slightly thicker consistency and cottage cheese a little thinner.

Why isn't my whipped ricotta creamy?

Using low-fat ricotta will cause the ricotta to be dry and grainy. Low-fat whipped ricotta does not blend as well and has a grainy texture. Whole-milk ricotta is best for making whipped ricotta, but if all you have is low-fat ricotta, try adding a tablespoon or 2 of heavy cream or olive oil.

Is whipped ricotta served cold or warm?

If serving as a dip for scooping, whipped ricotta should be served cold since it will hold its shape better. If using on pizza or in pasta, it's better warm or hot.

To Make the Truffle Whipped Ricotta with Honey
  1. Add the ricotta, truffle zest, fresh truffle (if using), and salt to a food processor or blender and blend for 30-60 seconds until smooth.
    450 grams whole-milk ricotta cheese, 1 teaspoon truffle zest, 1 teaspoon fresh truffle, grated, ¼ teaspoon salt
  2. Transfer the whipped ricotta to a plate or shallow bowl. Spread it into a ½-inch thick layer, then drizzle with the honey.
    3 TABLEspoons honey
  3. Serve cool with crostinis and refrigerate any leftovers for up to 3 days.
To Make the Homemade Crostinis
  1. Preheat oven to 475℉.
  2. Slice the bread into ½-¾ inch slices and cut as desired. Brush each side with the melted butter and arrange them evenly spaced on a baking sheet.
