Key Ingredients

Cucumbers. I use American cucumbers, but you can also use English or Persian cucumbers.
Lime juice. Freshly squeezed lime juice is preferred since it has a more floral flavor, while bottled options are more sour-tasting. You can substitute an equal amount of fresh lemon juice to make an equally tasty cucumber lemonade recipe!
Sugar. I used granulated sugar to really let the flavor of the cucumbers shine, but you can use whichever sweetener you prefer! If you want to avoid added sugars, try blending with fruits that are naturally sweet, like apples or pineapples!
How to Make This Cucumber Juice Recipe

- Step 1: Slice the cucumbers, then blend with sugar.

- Step 2: Strain the blended cucumbers well through cheesecloth to get the cucumber water.

- Step 3: Add lime juice and serve over ice!
Cucumber Juice FAQs
Bigger cucumbers are riper, so they will have a less bitter taste than their green (underripe) counterparts. Pick a cucumber that feels firm (not hard) but juicy. It should have a uniform green color.
It depends. Keeping the skin on retains more vitamins and nutrients, particularly vitamin K and potassium, and gives the cucumber juice a much richer flavor, but this will get more robust each day. Peeling the cucumbers will give the juice a much lighter cucumber flavor.
My recommendation is to keep the skin on if you're planning on the entire batch of cucumber juice being consumed that same day. You'll enjoy a deeper flavor that would be missing without the skin.
If you anticipate having leftover juice for the next couple of days, I recommend peeling half of the cucumbers you use in the juice. That way, even as the flavor becomes more robust, it won't be overpowering or bitter.
Absolutely not! Unlike other fruit juices, like strawberry limeade or this blueberry lavender lemonade, the liquid and a deep flavor can be easily drawn out from the cucumbers with blending only. Plus, heat can take away from the "fresh" flavor.
Yes. Without straining, the juice will be very chunky, so I recommend using cheesecloth to get all the cucumber water out without having any chunks of cucumber.
If you leave the skin on the cucumbers, your cucumber limeade will have a deep green hue. It's not a bad thing; in fact, it's an indicator that your cucumber lime juice has retained more vitamins and nutrients and has a deeper flavor. Below is a sample of cucumber juice made with peeled cucumbers (left) and the same juice made with skin-on cucumbers.

Ainseanlea's Top Tips
- Leave at least some of the skin on the cucumbers! It will give the cucumber lime juice a richer flavor. If you plan on serving all the juice on the same day, leave all the skin on. If you're planning on drinking/serving it over a couple of days, peel half of the cucumbers so the flavor doesn't become overpowering.
- Dress it up with some bubbles! Adding seltzer or club soda to a glass can instantly elevate this cucumber limeade, making it the perfect refreshing mocktail!
- Freeze into ice cubes! Cucumber limeade ice cubes are a lovely addition to cocktails and mocktails, and it doesn't require much time or effort!
- Avoid added sugar by blending with fruit. Apples and pineapples can add sweetness to this cucumber juice recipe without overpowering the cucumber flavor!
